he Ravece is an ancient olive tree native to Irpinia from the early 500s. It is considered a valuable olive, prized for its organoleptic characteristics. It has been documented since 1500 in Irpinia where it is equal in importance to the Ogliarola. It is grown almost exclusively in the Province of Avellino. It is a fairly rustic plant of average vigor; the foliage, with its typical gray-green coloring, is dense and compact. Being self-sterile, it must make use of pollinators such as Pendolino and Maurino. Drupes are medium to large in size. Productivity is abundant and constant, while ripening is late. Medium-low oiliness (15-6%), but its oil appreciated for good quality. The latter is yellow-green, with a fruity aroma, distinct bitter and spicy flavor; it has notes of green tomato, artichoke, herbs and sometimes almond.
